Brown Butter Apple Pie
Crust:
2 sticks cold butter
2.5 cups of flour
1/2 tsp salt
3 tsp sugar
1 tsp vanilla bean paste (or extract)
6 - 8 tbsp water
Filling:
1/2 stick unsalted butter
3lbs apples, peeled, cored, and cut into eighths
1 tbsp fresh lemon juice
1/4 cup all-purpose flour
1/2 tsp coarse salt
3/4 cup granulated sugar
1/2 cup dark-brown sugar, packed
1 tsp vanilla bean paste or extract
1 tsp cinnamon
1/2 tsp ground nutmeg
1 large egg, lightly beaten
1 tsp whole milk Granulated sugar for sprinkling
Directions:
Make the crust:
cut butter into cubes and refrigerate for 20 minutes
place flour, salt, sugar, paste into the bowl of a food processor and pulse 6 times
add butter and pulse 14 times.
with the processor running, add water 1 tablespoon at a time, until it comes together when pinched
Wrap in plastic wrap, roll out into a disk shape, and refrigerate for 30 minutes
Make the filling:
Brown butter in a small saucepan over medium-low heat about 8 minutes; let cool. You may want to swril the pan from time-to-time
Combine apples and lemon juice in a large bowl
In a separate bowl mix flour, salt, sugars, and vanilla-bean paste
Add browned butter to apples
Stir in flour mixture
Put it all together:
Roll out 1 disk of dough to 1/4 inch thick on a lightly floured surface to about 12 inches
Roll out remaining disk of dough to a 13-inch round
Add apples to the pie shell, brush edges with water, and cover pie with top crust
If you have any excess trim, but remember to leave a little for decoration
Fold the edges to seal and crimp to desired design
Cut steam vents in top crust. Freeze pie 30 minutes
Preheat oven to 425 degrees with rack in lowest position
Mix egg with milk, brush pie with egg wash and sprinkle with sugar
Place a foil-lined rimmed baking sheet under the pie for easy clean-ip
Bake for 15 minutes
Reduce oven temperature to 375 degrees and bake for 1 hour 20 minutes
Let cool completely on a wire rack
