peach margarita

Language lesson, margarita is Spanish for daisy. History lesson, U.S. residents travelling to Mexico for alcohol during Prohibiton brought this one back long before it became an US cinco de mayo hit. Here at the bistrō, we took a refreshing spin on the classic with a little stone fruit purée.

Recipe

Peach Margarita

  • 2 oz. tequila blanco or 1.5oz tequila+0.5oz mezcal for a smoky kick

  • 3/4 oz peach purée (instructions to make in body if not made ahead)

  • 1/2-3/4 oz lime juice

  • 2 tsp agave syrup

Directions

  1. If you are making the peach purée with this cocktail the instructions are as follows: cook 1 pound frozen peaches in 3/4 cup of water, with 2 tablespoons of sugar. Cook until the peaches are soft enough to be broken with a spatula. Purée in a blender for 30 seconds and allow to cool prior to mixing in the margarita.

  2. Pour all ingredients into shaker with ice.

  3. Shake well and strain into cocktail glass.

  4. Serve up or on the rocks.
